No-bake double almond bites

Not a cookie and not quite a candy, these no-bake double almond bites make for a sweet and filling snack or dessert!

No-bake double almond bites recipe

16 whole natural almonds
1/2 cup unsalted almond butter
1/3 cup powdered sugar
1/3 cup high fiber cereal, such as Fiber One Shreds, finely crushed in a baggie
1 1/2 ounces (about 1/4 cup) butterscotch chips, chopped (or mini chocolate chips)
1/2 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
1 tablespoon unsweetened cocoa powder


Heat a medium skillet over medium-high heat until hot. Add almonds and cook 4 minutes or until beginning to lightly brown, stirring frequently. Remove from heat and set aside on separate plate or paper towel.

Combine almond butter, sugar, cereal, chips, cinnamon and vanilla in a medium bowl. Stir until well blended.

Shape into 16 balls, about 1-inch in diameter and about 1 tablespoon each.

Place on a dinner plate. Using a fine mesh sieve, dust balls with cocoa powder, gently roll balls and dust the other sides. Press a whole almond in center of each ball.

Cover and refrigerate at least 2 hours for peak flavor and texture (this allows the flavors to blend and the texture to become creamier). Store in refrigerator in an airtight container up to 2 days.  May serve in foil or mini paper candy liners.

Note: Candy liners can be found in major supermarkets and craft stores.
