Recipe for grilled chicken wing drums with Gentleman Jack Mumbo sauce

“During one hot summer in Washington, DC, I was introduced to chicken wings with Mumbo Sauce by some neighborhood cooks. It has been a favorite of mine ever since. This is a hands-on appetizer that will get all over your guests’ fingers, lips and ‘give-me-more’ palates!”

Grilled chicken wing drumsticks with Gentleman Jack Mumbo sauce2 pounds chicken wing drums
2 tablespoons black pepper
1 teaspoon salt
1 teaspoon granulated garlic
1 tablespoon paprika


Put the dry ingredients in a bowl and stir until mixed. Put the drums in a sealable plastic bag, add the dry seasonings, seal the bag and shake until drums are coated with seasoning. Refrigerate the drums overnight.

Mumbo sauce ingredients

1/2 cup organic tomato ketchup
1/2 cup turbinado sugar or Steen’s Cane Syrup
1 1/2 tablespoons white distilled vinegar or pickle juice, sweet or dill
2 tablespoon hot sauce (I like Texas Pete or Louisiana brand)
2 tablespoons Gentleman Jack

Mumbo sauce directions

Combine the ingredients in a saucepan. Stir while sauce simmers for five minutes. Set aside to pour over grilled drums or to serve on the side for dipping.

Chicken directions

Grill drums over hot charcoal briquettes or gas flames, turning frequently with a long-handled tong, for 15 to 20 minutes or until done. Remove drums to a bowl or platter and cover with Mumbo Sauce. Serve immediately. Provide moist wash cloths for guests, plus paper towels.
